Rammy Gone Cheffy


I met up with my business partner, Chef Ron, yesterday to finish some errands, and after accomplishing things, he told me that he’s gonna make a pasta dish for us. Then came in the idea to my head to volunteer and do the cooking. Wee! It was just easy as following recipe books though I had a little hard time thinning the dough (coz we’re making fresh pasta) haha chef rammy


So what’s cooking?
Fettuccine with Italian Sausage, Tomatoes and Asparagus
What you need:
500 grams of freshly made pasta or spaghetti
2 pcs. Italian sausage, casing removed and mashed
1 large tomato, cut into half inch cubes
1 cup of diced asparagus
2 cloves of garlic, minced
1/2 of an onion, finely diced
1 Tbsp. of butter
3 Tbsp. of olive oil
1/3 cup of parmesan cheese
salt and pepper to taste
*for freshly made pasta you’ll need flour, water and egg
 pasta

Chef Ron made the dough already ahead of time but basically, you’ll just mix up the ingredients then let it rest. Then use a rolling pin or a bottle to flatten the dough. Use flour to avoid the dough from sticking to the rolling pin. When you think it’s thin enough, fold it until it looks like a big spring roll haha. Again, use flour, lots of it. Then you’re ready to cut and spread the pasta strips wee! Now all you have to do is cook it until al dente, just like any other readily available pasta in the market.

Time to cook the rest of the ingredients: cooking 
Heat the butter and olive oin in a pan. Sauté the garlic and onions and add in the mashed Italian sausage. Cook until done. Add in the tomatoes, asparagus and parsley. Season with salt and pepper then add the cooked pasta to the sautéed Italian sausage and vegetables and toss it. Salt and pepper to taste then top with parmesan cheese.

And here ya go, my Fettuccine with Italian sausage, tomatoes and asparagus.
