Chicken

Every weekend, whenever I go home in Cavite. I try to cook as much as possible. I had done this whole cooking the chicken thing during the Max’s All-you-can Chicken phenomenon was hitting everyone’s taste buds. I was ranting then to a friend-slash-chef on how much I was craving for this. So what he did, he gave me instructions on how to somehow, replicate the cooking process. So the secret to that very tender meat which makes it separate itself from its bones is, dandadaannnn!! — You boil the chicken (yes boil) in oil (yes oil!) and water in very low heat. Ratio is 1:1. Just put enough mixture to cover the chicken, and do this ahead of time because you’ll be boiling it for around, let’s say, 2hours. So after the whole drama, you blast fry the chicken, meaning, frying it for a few seconds in very high heat and then you’re ready to serve! Enjoy! :)
